Nankai Shochu
American blueberries are now in season, so we made American blueberries are now in season, so we made a lovely syrup and cocktail. This one’s packed full of antioxidants and Vitamin C!

Blue Monday
2 oz Nankai Shochu
1 oz Blueberry Syrup (see below)
0.5 oz Fresh Lemon Juice

Combine all ingredients in a shaker with ice. Shake and strain into a glass over ice. Garnish with mint and blueberries.

1 cup Fresh Blueberries
1 cup Raw Sugar
0.5 cup Water

Combine all ingredients in small pot. Heat until boil. Lower heat and simmer for 4 minutes. Let cool and refrigerate.

Mr.Haseba produces Nankai with traditional and modern techniques. 

Fermentation of the mash is via a magical Japanese spore, koji. It’s what makes shochu, sake, soy sauce, and miso possible. 

Nankai Shochu is single-distilled and vacuum-distilled, a modern technique that makes it possible to create alcohol at lower temperatures. The result is a smoother, gentler, yet flavorful distillate.

Our latest cocktail, the Passionfruit Shochu Sour, was shot in dim light with a black background. No filters.

The cocktail itself is as delicious as it is beautiful. 

3 oz Nankai Shochu
0.5 oz Passionfruit-infused Syrup
0.5 oz Fresh Lemon Juice
1 oz Passionfruit Juice

Shake with ice and double strain. Serve on the rocks with a lemon peel garnish.

But here’s a photo of our bottle from a few years ago when we were just starting out and hoping that people would fall in love with our vacuum-distilled Shochu like we have.

The weather is warming, and we just received some The weather is warming, and we just received some lovely sliced yuzu peels from @kinjirushiwasabi so we made a boozy sorbet.

There are a lot of ways to accomplish making an alcoholic sorbet but this time around we decided to use gelatin.

Ingredients: Nankai Shochu, yuzu juice and sliced yuzu peels from @kinjirushiwasabi , water, sugar, and gelatin.

Topped with Vietnamese cinnamon, chopped mint, and shaved Marrakech lime.
