We received some homemade tepache (fermented pineapple juice) from our good friend @el_tiki_mexicano and he related a beautiful story to me. In Mexico, friends and families would celebrate special occasions by gifting something personally made, maybe a tepache or a mezcal. It would be something that is not easily made to show the gift is full of care and love. We named this cocktail Xochitl, the Aztec word for “flower,” which happens to be Esteban’s calling card. Flower is also the word we use to toast on Amami Island, which is a lovely coincidence. Thank you for the flavorful and love-filled tepache, Esteban! February is #japanesecraftspiritsmonth and today February is #japanesecraftspiritsmonth and today we wanted to showcase how well Nankai Shochu works in cocktails. The key word is flavor. Shochu is single-distilled so it is full of flavor. It is made from kokuto, a pure and unrefined form of sugar that enhances many flavors. And finally it is fermented using koji and this brings an element of umami. Here is a small collection of some of our favorite and most popular Nankai cocktails, including the Calamansi Highball, Yuzu Pop, Thai Kokuto Gimlet, and Gold Fashioned.
