In Japan, food and drink are inseparably connected In Japan, food and drink are inseparably connected. Our kokuto shochu draws on umami-driven koji and flavor-enhancing kokuto sugar for fun and easy food pairings.

We’ve partnered with @kokorocares and their premium “Otsumami,” or bar snack, set to explore some incredible flavor combinations.

Nankai Shochu is a vacuum-distilled kokuto (black Nankai Shochu is a vacuum-distilled kokuto (black sugar) shochu that “goes well with just about everything,” according to Food & Wine. And Nankai is superb when mixed with coffee drinks, like our new cocktail, “Totoro Needs Coffee.”

TOTORO NEEDS COFFEE
1.5 oz Nankai Shochu
1.5 oz Espresso
0.5 oz Coffee Liqueur

Combine all in a cocktail shaker with ice.  Shake well to chill and strain into cocktail glass. Dust with instant espresso.

MOKU KOKU HIGHBALL
2 oz Nankai White Oak
4 oz @fevertree_usa Soda Water 
Lemon Wedge

Add crystal clear @kuramoto_ice to a Collins glass, stir to temper, and discard excess water. Pour White Oak and squeeze lemon juice over ice. Add soda water gently, avoiding direct contact with ice. Stir gently and serve.

Enjoy after work, on a hot day, or with food like Yakitori.
