Nankai Shochu is a vacuum-distilled kokuto (black Nankai Shochu is a vacuum-distilled kokuto (black sugar) shochu that “goes well with just about everything,” according to Food & Wine. And Nankai is superb when mixed with coffee drinks, like our new cocktail, “Totoro Needs Coffee.”

TOTORO NEEDS COFFEE
1.5 oz Nankai Shochu
1.5 oz Espresso
0.5 oz Coffee Liqueur

Combine all in a cocktail shaker with ice.  Shake well to chill and strain into cocktail glass. Dust with instant espresso.

The KOJI 1200, a shochu sour using an incredible y The KOJI 1200, a shochu sour using an incredible yuzu miso from @miso_dtla 

First, what is koji? It’s the miracle spore used in fermenting everything Japanese. Miso, soy sauce, sake and shochu all use koji to create unique flavor profiles rich in umami. 

Secondly and our inspiration for our cocktail name, there was a Japanese comedian turned music artist named KOJI 1200 who had a semi-hit song called “Now Romantic.” We loved it in high school.  It has nothing to do with actual koji but Google it and thank me later. 

KOJI 1200
3 oz Nankai Gold
1 oz Simple Syrup
1 oz Fresh Lemon Juice
1 tsp Yuzu Miso from @miso_dtla 

Combine all with ice in shaker.  Shake and strain into a coupe glass. Garnish with sliced celery. Enjoy while blasting “Now Romantic.”

Introducing:  the Koala & the Bee, our original cocktail with a lovely profile but an admittedly terrible name. The honey syrup and eucalyptus bitters really add some fun and delicious notes to our beloved Nankai White Oak.

THE KOALA & THE BEE
3 oz Nankai White Oak
0.5 oz Honey Syrup (1:1)
1 dash Angostura Bitters
2 dashes Eucalyptus Bitters (@thebitterqueens)

Instructions: Combine everything in a cocktail glass. Add a large ice cube and stir gently, careful not to overdilute. Express a lemon peel and serve.
