Nankai Shochu
We founded Nankai after falling in love with the c We founded Nankai after falling in love with the clean and refreshing vacuum-distilled kokuto (black sugar) shochu.  However, what sealed the deal for us was tasting cask-finished Nankai, one of which would win the top prize at the Tokyo Whisky Competition and another would take Double Gold at @sfwspiritscomp. Complex with unique flavors but incredibly approachable, Nankai Gold and Nankai White Oak are must-try spirits.

Nankai White Oak is a delicious cask-finished Shoc Nankai White Oak is a delicious cask-finished Shochu from Amami Island. While it can easily be enjoyed neat or on the rocks, another fun way to enjoy it is with a bit of salted plum, or “umeboshi.”

Simply add a salted plum to your glass, add Nankai White Oak, ice and soda water (2:1). Muddle the plum a little with each refill for a burst of flavor and aroma.

It’s a great way to enjoy Nankai and a temporary retreat from this summer heatwave.

Sumomo, or Japanese plums, have been cultivated in Sumomo, or Japanese plums, have been cultivated in Japan for over 1,000 years. In the 19th century, Luther Burbank, famous for crossbreeding, brought the Sumomo to California.  His hybrid Sumomo plums are still widely available in the U.S today.

To us, that represents what we want for Shochu— to come to the U.S. and adapt to the drinking culture here and thrive in its own way.

In honor of that, here’s a lovely spin on a highball:

GIMME SUMOMO
2 oz Nankai Shochu/White Oak
1.5 oz Sumomo Syrup*
4 oz Soda Water

Combine Nankai and syrup in a glass over ice.  Top with soda water and stir gently.

* Sumomo Syrup: Combine 3 cups of sliced plums with 1 cup of organic cane sugar. Bring to a boil. Strain.

Nankai Shochu mixes well with just about everythin Nankai Shochu mixes well with just about everything, including Japanese green tea. Just use 2 parts tea to 1 part Nankai. The tea brings out a subtle sweetness in the shochu even though this drink will be 100% sugar-free.
